A unique style of making the regular Aloo Bhindi. Quick and a great tiffin box recipe!
4 medium potatoes (aloo), peeled and cut into strips
200 grams lady fingers (bhindi), stemmed and cut into 4 pieces vertically
2 tbsps oil
1 tsp cumin seeds
½ tsp turmeric powder
Salt to taste
½ tsp Tata Sampann Red Chilli Powder
1 tsp dried mango powder
2 tbsps chopped fresh coriander + for garnish
Rotis for serving
1. Heat oil in a non-stick pan. Add cumin seeds and once they start to change the colour, add potatoes and sauté for a minute.
2. Add turmeric powder, salt, Tata Sampann Red Chilli Powder and mix well. Cover and cook for 6-8 minutes or till the potatoes are ¾ cooked.
3. Add bhindi and dried mango powder and toss well. Cover and cook for 8-10 minutes. Add coriander leaves and mix well.
4. Garnish with coriander and serve hot with rotis.
