TOMATO UPMA
Preparation time : 15 minutes
Cooking time : 15-20 minutes
Servings : 2

Ingredients
For Roasting Rava
2 tbsp Ghee (घी)
1 cup Bombay Rava (बॉम्बे रवा/सूजी)

For Tempering
1 tbsp Ghee (घी)
2 tbsp Oil (तेल)
1 tsp Mustard Seeds (सरसों के बीज)
¼ tsp Cumin Seeds (जीरा)
½ tsp Chana Dal (चना दाल)
1 tbsp Gota Urad (गोटा उरद)
1 sprig Curry Leaves (कड़ी पत्ता)
1 inch Ginger – chopped (अदरक)
3 fresh Green Chillies – chopped (हरी मिर्च)
1 medium Onion – chopped (प्याज़)
Salt to taste (नमक स्वादानुसार)
½ tsp Turmeric Powder (हल्दी पाउडर)
¼ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
1 cup Tomato Puree (टाॅमेटो प्यूरी)
½ tsp Sugar (चीनी)
3 cups Water (पानी)
2 medium Tomatoes – chopped (टमाटर)
½ small Lemon Juice (नींबू का रस)
1 cup roasted Bombay Rava (भुना बॉम्बे रवा)
Fried Nuts (फ्राइड नट्स)
2 tbsp Coriander & Mint leaves – chopped (धनिये और पुदीने के पत्ते)
1 fresh Green Chilli – chopped (हरी मिर्च)

For Fried Nuts
2 tbsp Ghee (घी)
2 heaped tbsp Peanuts (मूंगफली)
6-8 Cashew Nuts (काजू)

Process
For Roasting Rava
In a kadai heat ghee and add bombay rava and lightly roast it until dry on medium heat.
Remove and keep aside for further use.

For Fried Nuts
In a small pan heat ghee then add peanuts and fry them for half a minute and then add cashew nuts and fry both until light brown.
Remove and keep aside for further use.

For Tempering
In a kadai heat ghee, oil then add mustard seeds, cumin seeds, chana dal, gota urad, curry leaves and saute until light brown.
Now add ginger, green chillies, onion and saute until translucent then add salt, turmeric powder, degi red chilli powder, tomato puree and saute for 2-3 minutes on medium heat.
Then add sugar, water, chopped tomatoes, lemon juice and mix everything properly then bring it to a boil and add bombay rava slowly so there are no lumps forming by stirring it continuously.
Add fried nuts, mix them and sprinkle some water on top then cover and cook it for 2 minutes.
Remove the lid and switch off the flames then add chopped coriander & mint leaves, green chilli and give it a final mix.
Serve hot on a serving plate and garnish with mint leaves and papad.

In This Video, I Will Show You Bengali Red Chicken Curry In A Step By Step Process.
Murgir Lal Jhol (Bengali Red Chicken Curry) is spicy, delicious and soupy chicken curry with potatoes flavoured with spices. Aloo Murgir Jhol is a quick and easy Sunday/noboborsho special Bengali recipe best eaten with piping hot rice and squeeze of lime.

As a Bengali, fish used to be an everyday thing at home. So chicken or mutton used to be like a treat, which we enjoyed on Sundays Or Nababarsho Or Any Holiday.
Hence Nababarsho Special Murgir Laal Jhol. You can also call it Chicken Jhol Recipe Bengali Style.
One more thing, Bengali curries specially murgir jhol recipe will be incomplete without large pieces of potatoes. The potatoes soak up all the lovely juices from the curry make it juicy and irresistibly delicious. So please never skip adding the potatoes in the curry.
In this aloo murgir jhol I used Kashmiri Red Chillies along with a generous quantity of garlic and a little ginger.So we can call this recipe as chicken aloo curry.

INGREDIENTS:
For Sugar Syrup:
* Water(पानी) – 400 Ml
* Sugar(चीनी) – 4 Cup/850 Gram

For Halwa:
* Corn Flour(आरारोट) – 150 Gram
* Water(पानी) – 300 Gram
* Ghee(घी) – 100 Gram
* Citric Acid(साइट्रिक एसिड) – 1 Gram/2 Pinch
* Green Food Color(हरा फूड कलर) – Some
* Chocolate Food Color(चॉकलेट फूड कलर) – Some
* Dry Fruits (सूखे मेवे) – 200 Gram
* Pistachio(पिस्ता) – For Garnishing
* Melon Seeds(तरबूज के बीज) – Some

RECIPE:
For Sugar Syrup, keep the pan on the flame, put Water and Suger in it, mix it, and boil it. When Sugar dissolved properly in the Water then turn off the flame and keep it aside.
For Halwa, in a bowl, put Corn Flour, some Water and mix it with a hand blender. Then Keep the heavy pan on the flame, put some Ghee and some Suger Syrup in it and mix it. Now mix the Corn Flour mixture by sieving it and keep stirring it constantly. Then add Sugar Syrup and stir it continuously. Put Citric Acid Water & Ghee and stir it continuously. Cook the halwa with continuous stirring on a low flame until it starts to become thick and transparent. Then Put Green and Chocolate Food Color into the halwa and mix it well. After then Add chopped Dry Fruits in it and mix it well and cook halwa until appears transparent. Put the Halwa in a tray greased with Ghee. Put some chopped Pistachio on the Halwa and keep it cool for 4-5 hours at room temperature. Once it gets cooled completely then cut into pieces, serve it and enjoy it.
For wrapping, take polythene, put some Melon Seeds on it and keep the Halwa piece on it and wrap it. In this way, chewy and delicious Karachi Halwa will get ready at home.

THAI CURRY
Preparation time 10 minutes
Cooking time 15-20 minutes
Serving 2

Ingredients
For Thai Green Paste
½ inch fresh Galangal, slice, गंगल
1 inch Lemongrass steam, slice, लेमनग्रास
½ Onion, slice, प्याज
⅓ cup Coriander with roots, roughly chopped, धनिया के डंठल
2-3 Green chilli, roughly chopped, हरी मिर्च
2-3 Kaffir lime leaves, roughly torn, काफ़िर लाइम
Salt to taste, नमक स्वादअनुसार

For Curry
1 tbsp Oil, तेल
2 tbsp Prepared green thai curry paste, ग्रीन थाई करी पेस्ट
½ Green zucchini, slice, ग्रीन जुकिनी
1 medium size Thai eggplant, slice, थाई बैंगन
½ cup Broccoli, florets, ब्रोकोली
⅓ cup Cauliflower, florets, फूलगोभी
2-3 Baby corn, cut diagonally, बेबी कॉर्न
1 Red chilli, slice, लाल मिर्च
1 cup Coconut milk, नारियल का दूध
½ cup Water, पानी
½ tsp Sugar, चीनी
5-10 Basil leaves, तुलसी के पत्ते

Process
For Thai Green Paste
In a mortar pestle, add galangal, lemongrass steam, onion.
Add coriander roots, green chilli, kaffir lime leaves, and salt to taste and make a smooth paste of it.

For Curry
Heat oil in a kadai or wok, add prepared green thai curry paste.
Now, saute on medium flame for five minutes.
Add coconut milk and saute it well.
Add a little water, sugar and stir to combine into the curry.
Add all the vegetables one by one baby corn, broccoli, cauliflower, thai eggplant, green zucchini and mix it well.
Stir and allow the curry to thicken a little and come to a boil.
Add basil leaves, red chilli. Stir the mixture, give it a light boil.
Serve hot thai curry with steamed rice or jasmine rice.
