Exotic Mushroom Stir Fry | The Wok Street | Chef Ankit | Sanjeev Kapoor Khazana



The best part of Oriental cooking is that a good stir fry is good enough to prepare a dish. The choicest and the exotic of mushrooms stir fried. It’s that simple.

EXOTIC MUSHROOM STIR FRY

Ingredients

8-10 oyster mushrooms
4 dried shitake mushrooms, soaked in warm water for 20 minutes
12-15 white shimeji mushrooms
1 bunch of enoki mushrooms
10-12 pak choy
2 tbsps blended sesame oil
2 tbsps finely chopped ginger
2 tbsps finely chopped garlic
2-3 fresh red chillies, chopped
1 medium onion, sliced
1 medium red capsicum, cut into strips
2 tbsps oyster sauce
1 tbsp black rice vinegar or malt vinegar
2 tbsps cooking wine
Salt to taste
Black pepper powder to taste
Toasted white sesame seeds for garnish
Sliced spring onion greens for garnish

Method

1. Slice the oyster mushrooms.
2. Drain the shitake mushrooms and roughly slice them. Roughly chop the shimeji mushrooms. Trim the ends of the enoki mushrooms and roughly chop them.
3. Roughly slice the pak choy.
4. Heat blended sesame oil in a wok. Add ginger, garlic, and red chillies and mix well.
5. Add onion and sauté for 1 minute. Add the mushrooms and sauté for 2-3 minutes.
6. Add the red capsicum and toss for 1 minute.
7. Add the pak choy and mix well. Cook for 1-2 minutes.
8. Stir in the oyster sauce, black rice vinegar, and mix well. Add salt, and black pepper powder and mix till well combined.
9. Serve hot garnished with toasted white sesame seeds and spring onion greens.

मशरुम कीमा | Mushroom Keema | Mushroom Recipes | Sanjeev Kapoor Khazana



A tasty and unique keema made using button mushrooms.

MUSHROOM KEEMA

Ingredients

30-35 button mushrooms, halved
3 tbsps oil
6-8 black peppercorns
3-4 green cardamoms
4-5 cloves
1 inch cinnamon stick
2 bay leaves
1½ tsps cumin seeds
2-3 green chillies, finely chopped
1 tbsp finely chopped ginger
1½ tbsps finely chopped garlic
2 medium onions, finely chopped
Salt to taste
2 small tomatoes, chopped
1 tsp coriander powder
1 tsp red chilli powder
½ tsp turmeric powder
1 tsp garam masala powder
½ lemon
2-3 tbsps chopped fresh coriander leaves + for garnish
To serve
Pavs as required
Onion slices as required
Lemon wedges as required

Method

1. Put the button mushrooms in a chopper and finely chop them. Transfer into a large bowl.
2. Heat oil in an iron pan. Add black peppercorns, green cardamoms, cloves, cinnamon stick, bay leaves, cumin seeds, green chillies, ginger, and garlic and sauté for 1-2 minutes.
3. Add onions, and salt and mix well. Cook till golden brown.
4. Stir in the tomatoes and cook till soft and pulpy.
5. Add coriander powder, red chilli powder, turmeric powder and garam masala powder and mix well. Cook for 1-2 minutes.
6. Add the chopped mushrooms, mix and sauté for 2-3 minutes on high heat. Reduce the heat to medium and continue to cook for 6-8 minutes or till done.
7. Squeeze the juice of lemon directly into the pan and mix well.
8. Sprinkle the coriander leaves and mix till well combined.
9. Transfer the mushroom keema into a serving bowl. Garnish with coriander leaves and serve hot with pavs, onion slices and lemon wedges.

Stuffed tandoori mushroom-
mushroom-250gm
butter-1tbsp
chat masala

For stuffing

extra part of mushroom fine chop
green chilly-1 nos
ginger- 1/2 inch
oil-1 tsp
cumin-1/4 tsp
salt- to taste
kali mirch- 4 nos
processed cheese-1 tbsp ( or two cheese slice)

For marination-
curd-1cup ( should be not sour then hung for two hour)
kasmiri chilli-1tsp
besan-1tbsp
mustard oil- 1tbsp
kasoori methi-1/2tsp
chat masala-1/2 tsp
black salt- 1/4 tsp
salt-to taste
garam masala-1/2 tsp
lemon juice-1/2 tsp
cumin powder-1/2 tsp
